                            Best Zucchini  Bread

    4      large         eggs
      3/4  cup           oil
    1      teaspoon      salt
    1      teaspoon      baking powder
    1 1/2  teaspoons     vanilla
    1 1/2  cups          sugar
    3      cups          flour
    1      teaspoon      baking soda
    1      teaspoon      cinnamon
    2      cups          grated zucchini
    1      cup           chopped  walnuts or pecans
 
    Preheat oven to 350*F. Generously grease and flour 9 x 5-inch
   loaf pan, or spray with nonstick cooking spray.
   Stir together eggs, oil, salt, baking powder,vanilla, sugar, flour,
   baking soda and cinnamon. (batter is very thick). Add zucchini. 
  Fold in walnuts. Spoon into prepared pan. Bake for 1-1/4 hours 
   or until done. Serves 9.
