                               Jalapeno Puffs

    2                    eggs
    2                    egg whites
      1/2  cup           skim milk
      1/4  cup           green onions -- chopped
      1/4  cup           reduced-fat sharp cheddar cheese -- shredded
    2      tablespoons   jalapeno slices -- drained
      1/3  cup           flour
      1/4  teaspoon      salt
      1/4  teaspoon      baking powder
 
      Preheat oven to 425° F. and heat 24 mini-muffin cups until hot.
      Blend all ingredients in a blender at medium speed about 30-45 seconds.
      Spray hot muffin cups and fill immediately 2/3 full.
      Bake about 10 minutes until puffed and lightly browned.
      Makes 8 servings of 3 puffs each.
