                              PUMPKIN COOKIES

    2      cups          sugar
    2      cups          shortening
   16      ounces        canned pumpkin
    2                    eggs
    2      teaspoons     vanilla
    2      teaspoons     cinnamon
    1      teaspoon      nutmeg
      1/2  teaspoon      allspice
    4      cups          flour -- sifted
    2      teaspoons     baking powder
    1      teaspoon      baking soda
    1      teaspoon      salt
    2      cups          raisins
    1      cup           nuts -- chopped
                         ***Icing***
    3      ounces        cream cheese -- softened
                         I teaspoon vanilla
    2      cups          powdered sugar -- sifted
 
 In a large bowl cream sugar and shortening. Add pumpkin, eggs, and vanilla. Bea
 t well. Sift together dry ingredients and spices. Add to creamed mixture; mix w
 ell. Stir in raisins and nuts. Drop by rounded teaspoonfuls onto greased cookie
  sheet, about 2 inches apart. Bake at 350 degrees for 12 - 15 minutes. Remove a
 nd cool. Frost with icing.
 
 Icing:
 
 Mix all ingredients together until smooth. Spread on cooled cookies. Can be mad
 e ahead and kept in the refrigerator.
