       Title: Peanut Butter & Jelly Streusel Bars

       Yield: 3 servings
     1/2 c  Shortening
   1 1/4 c  Brown sugar; packed
     3/4 c  Creamy peanut butter
       3 tb Milk
       1 tb Vanilla
       1    Eggs
   1 3/4 c  Flour
     3/4 ts Baking soda
     3/4 ts Salt
       1 c  Strawberry jam
     1/2 c  Quick-cooking oats
      Heat oven to 350 degrees. Grease 13 x 9 baking pan. In large bowl,
   with electric mixer at medium speed, beat shortening, brown sugar, peanut
   butter, milk and vanilla until well blended. Add egg; beat just until
   blended. In medium bowl, combine flour, baking soda and salt. With mixer at
   low speed, add flour mixture to shortening mixture; mix just until blended.
   Press 2/3 of dough in bottom of prepared baking pan in an even layer.
   Spread jam evenly ovewr dough to within 1/4 of sides.
       Combine remaining dough with oats; drop by spoonfuls onto jam layer.
   (Dough will be stiff.)  Press lightly to even out dough layer. Bake 20 to
   25 minutes, or until edges and streusel topping are lightly browned. Cool
   completely in pan on wire rack. To serve, cut into bars.
