       Title: Sand Tarts # 2

       Yield: 1 servings
  
       8 tb Butter
       1 c  Sugar
     1/4 ts Salt
       1    Egg
       2 c  Cake flour; sifted
     1/2 ts Vanilla
            Topping:
       2    Egg whites
       2 tb Sugar
     1/2 ts Cinnamon
  
     Beat butter, add sugar and beat till fluffy. Add egg and salt,beat until
   very light and fluffly. Beat in flour and vanilla. Wrap dough and
   refrigerate for 3 hours. Roll out between sheets or waxed paper until very
   thin Cut and place on buttered sheet with flexible, thin spatula. Beat
   whites lightly with fork and, using pastry brush, brush tops. Sprinkle
   cinnamon and sugar to taste, but do not over do. Bake at 375^ for 10 t0 12
   min, until golden around the edges.
     Cool slightly before removing from sheet. Store air tight.
