                         Granola-Buttermilk Muffins

    1                    egg
      1/2  cup           packed brown sugar
      1/3  cup           shortening
    1      cup           buttermilk
    1 1/2  cups          granola (any flavor) -- slightly crushed
    1 1/4  cups          all-purpose flour
    1      teaspoon      salt
    1      teaspoon      baking powder
      1/2  teaspoon      baking soda
 
 Heat oven to 400 F. Grease bottoms of 12 medium muffin cups., 2 1/2x1 1/4".
 Beat in brown sugar, shortening and buttermilk thoroughly. Stir in
 remaining ingredients just until flour is moistened (batter will be lumpy).
 Fill muffin cups 3/4 full. Bake until light brown, 20-25 minutes.
 Immediately remove from pan; serve warm.
 Makes 12 muffins.
