                     COTTAGE CHEESE AND OIL PASTRY (3)

    4 1/2   oz           (125g) cottage cheese
                         (well pressed out)
    4       tb           Milk
                         Egg yolk
      1/2   x            Egg white
    4       tb           Oil
    1       t            Salt
    9       oz           (250g) plain flour
    1       pk           (16g) Backin
 
   rub the cottage cheese through a fine sieve, if
   desired and mix with the milk, egg yolk, and 1/2 egg
   white, oil and salt.  mix and sieve together the flour
   and the Backin and add to the mixed ingredients, a
   little at a time, until slightly more than half has
   been used. Knead in the rest of the flour.
