                          Gingerbread & Applesauce

    1      cup           whole-wheat flour
    1      cup           all-purpose flour
    1      teaspoon      baking soda
    2      teaspoons     double-acting baking powder
      1/4  teaspoon      salt
    1      teaspoon      ground ginger
      1/4  teaspoon      ground cloves
    1      teaspoon      cinnamon
      1/3  cup           butter
      1/2  cup           sugar
    1                    egg
      1/2  cup           molasses
      1/2  cup           hot water
    2      cups          unsweetened applesauce
    2      tablespoons   brown sugar
    3      tablespoons   candied ginger root -- finely chopped
      1/2  teaspoon      cinnamon
 
      Sift together flour, soda, baking powder, salt, ginger, cloves, and
 cinnamon. Cream butter and white sugar. Beat in egg and molasses. Stir in dry
 ingredients, alternating with water.
      Place applesauce in a buttered Dutch oven or other large, heavy casserole
 dish. Mix brown sugar, crystallized ginger, and 1/2 teaspoon cinnamon.
 Sprinkle over applesauce. Pour gingerbread batter over all. Bake at 350
 degrees for 35 minutes, or until gingerbread is done. Serve at once.
