                     Red, White, and Blueberry Parfait

    2      cups          lowfat (2%) cottage cheese
      1/2  cup           light sour cream
      3/4  teaspoon      mace -- *
    1      tablespoon    granulated sugar
    2      cups          fresh blueberries
    1      tablespoon    powdered sugar
    1      cup           fresh raspberries
      1/2  tablespoon    powdered sugar
 
 * Can substitute nutmeg, cinnamon, or allspice.
 [970802: Mace was good. Might try allspice.]
 
 Combine cottage cheese, mace, granulated sugar, and sour cream in blender.
 Blend until smooth; refrigerate.
 
 Gently toss blueberries with 1T powdered sugar.
 Refrigerate in a small bowl.
 
 Gently toss raspberries with remaining 1/2T powdered sugar.
 Refrigerate in a small bowl.
 
 At serving time, place a [small] scoop of the cottage cheese mixture in bottom 
 of
 each of 6 parfait glasses.
 Add a generous layer of blueberries.
 Add another scoop of cheese mixture.
 Top each glass with raspberries.
 
 Notes:
 - You can make all this ahead and assemble just before serving.
 - Original recipe said this serves 8. It was just enough for 6 of my parfait
 glasses, and was a good amount.
 - This was hardly sweet at all, just tasty. For real sweet tooths, you might se
 rve
 with a bowl of colored granulated sugar on the side, or just mix some extra sug
 ar
 into the cottage cheese/sour cream mixture.
