                               APRICOT GRATIN

                         Vegetable oil
      1/2  cup           pears -- peeled, cored &
                         thinly sliced
      1/2  cup           apples or peaches -- cored, peeled, &
                         thinly sliced
    1      cup           unsulfured dried apricots -- halved
      1/2  cup           brown sugar -- firmly packed
    1      teaspoon      lemon juice
      1/2  teaspoon      ground cinnamon
      1/2  cup           crushed amaretti cookies
 
 Lightly oil six 4-inch gratin dishes. Divide pears, apples and apricots
 evenly among gratin dishes.   In small bowl, stir together brown sugar,
 lemon juice and cinnamon. Spoon over fruit. Top with crushed cookies. Cover
 each dish with aluminum foil.  Bake at 400 degrees 20 minutes. Remove foil
 and bake until lightly browned, 5 to 10 minutes longer.
