                      Summer Peaches and Cream Parfait

   Amount  Measure       Ingredient -- Preparation Method

      1/2  tsp           ascorbic-citric mixture
    2      c             sliced fresh peaches
      1/4  c             butter or margarine -- softened
      3/4  c             sifted powdered sugar
    1                    egg -- slightly beaten
      1/2  pt            whipping cream -- whipped
      1/2  c             vanilla wafer crumbs
      1/4  c             finely chopped crystallized ginger
 
 Prepare ascorbic-citric mixture according to pkg directions; sprinkle over peac
 hes, mixing well.  Set aside.
 Cream butter and sugar; add egg, beating well.  Cook egg mixture in top of a do
 uble boiler, stirring constantly, until thickened and mixture coats a metal spo
 on.  Cool.
 Fold egg mixture into whipped cream.  Alternate layers of whipped cream mixture
 , cookie crumbs, peaches, and ginger in parfait glasses.  Chill 2 hrs.
