                Quick Dried Fruit Compote (Pressure Cooked)

      3/4  cup           red or white wine
    1 1/4  cups          water
    3      slices        lime or lemon
    5      slices        fresh ginger, quarter-size (up to 6)
    1      3 in stick    cinnamon -- halved
      1/8  teaspoon      ground cardamom
    2      cups          mixed dried fruit -- * see note

 Combine all the ingredients in the cooker.  Lock the lid in place and over high
  heat bring to high pressure.  Adjust heat to maintain high pressure, and cook 
 for 5 minutes.  Let the pressure drop naturally or use a quick release method.
 
 Remove the lid, tilting it away from you to allow any excess steam to escape.  
 Remove the cinnamon sticks and serve warm, or refrigerate in a tightly sealed c
 ontainer until needed (up to two weeks).
