       Title: OAT AND BROWN SUGAR CRUMB TOPPING

       Yield: 12 Muffinss
  
       1 c  Unbleached or whole wheat
            Flour
     3/4 c  Rolled oats (not instant)
     2/3 c  Packed light brown sugar
       1 ts Ground cinnamon
            Pinch of salt
     1/2 c  (1 stick) cold, unsalted
            Butter cut into 1/4 in. pcs
  
   Mix the flour, oats, brown sugar, cinnamon and salt in a large bowl. Add
   the butted and rub into the dry ingredients until you have a uniform,
   dampish crumbs. If it seems overly clumpy, rub in a tbs. or two of more
   flour. Store whatever you aren't using right away in a sealed plastic bag
   in the freezer. Makes about 2
       1/2    cups.
