                                 Lemon Ice

   Amount  Measure       Ingredient -- Preparation Method

    2      c             boiling water
    1      c             sugar
    2      tbsp          grated lemon rind
      1/3  c             fresh lemon juice
           dash          salt
 
 Combine all ingredients, stirr well.  Let cool to room temperature. 
 Pour into a 8-inch square baking dish; cover.  Freeze at least 6 hours. 
 Bread frozen mixture into chumks.  Place chunks in food processor;
 process until smooth.
