                              Raspberry Mousse

      1/2  cup           apple cider or juice
    1      tablespoon    agar-agar flakes -- or 1 envelop Knox
    1      10.5 oz pkg   soft silken tofu
    3      tablespoons   honey
    3      cups          raspberries -- or strawberries
    1      teaspoon      vanilla
                         mint sprigs -- for garnish
 
 In saucepan over low heat, bring cider to a simmer.
 Add agar-agar; stir until dissolved, about 5 minutes.
 [Or soften gelatin in juice, then heat and stir till dissolved.]
 
 In food processor bowl, combine cider mixture, tofu, honey, raspberries or
 strawberries, and vanilla.
 Process to desired texture (some berries can be left slightly chunky for textur
 e).
 Pour into dessert dishes [or single mold].
 Chill at least 1 hour.
 Garnish with mint.
 
 Serves 8.
