                   Sweetheart Strawberry Valentine Mousse

    1      c             sugar
    2 1/2  tbsp          unflavored gelatin
    3                    egg yolks
    3      c             milk
    5      oz            strawberry cordial
      1/2  tsp           vanilla
    3                    egg whites
      1/4  c             sugar
    2 1/2  c             heavy cream
      1/4  c             sugar
 
 In top of double boiler, mix sugar and gelatin.  Beat together until well blend
 ed egg yolks and milk and stir into gelatin mixture.  Cook and stir over boilin
 g water until gelatin is dissolved, about 5 min.  Remove from heat and stir in 
 strawberry cordial and vanilla.  Chill until mixture mounds when dropped a spoo
 n.
 Beat egg whites until frothy.  Gradually add second portion of sugar and beat u
 ntil stiff peaks form.  Whip chilled cream with balance of sugar until soft pea
 ks form.  Fold in the chilled mixture and turn into a 2-qt heart-shaped mold.  
 Cover with aluminum foil and freeze.
 About one hr before serving, unmold onto a chilled serving plate.  For easier r
 emoval, cover bottom of mold with paper.  Garnish with a piping of whipped crea
 m and strawberries.
