               Chilaquiles Verdes w/ Tomatillo Sauce & Cotija

                         ***Chilaquiles Verdes***
      1/8  cup           Cacique Brand Cotija cheese -- crumbled
   12      ounces        Cacique Brand Oaxaca cheese -- cubed
   15      ounces        Cacique brand Crema Mexicana Agria
   24                    corn tortillas -- cut in strips
                         -- and fried -- OR
                         tortilla chips
                         ***Tomatillo Sauce***
    1 1/2  pounds        tomatillos
    2      large         yellow onions -- finely chopped
      1/4  cup           lime juice
    4      teaspoons     dried oregano
    4                    serrano peppers -- chopped
    1      cup           cilantro -- chopped
                         salt and pepper -- to taste
 
 Layer the tortillas in a baking dish and pour the sauce over. Sprinkle with the
   Cotija and Oaxaca, and bake in a 350º oven for approximately 15-20 minutes or u
 ntil the cheese melts. Top with spoonfuls of Crema Agria. 
 
 Tomatillo Sauce:
 To make the Tomatillo salsa, peel the husks of the tomatillos and dice. Mix wit
 h onions, garlic, lime juice, oregano, chilies, cilantro, and salt and pepper t
 o taste. Serranos vary in heat, so add accordingly.
