                       Dinner Dilema Huevos Rancheros

    1                    avocado -- diced
    1      cup           salsa
    4                    flour tortillas
                         non stick spray
    3      cups          frozen pepper and onion mixture
   10      large         eggs
                         salt and pepper to taste
                         ***TOPPING***
                         sour cream
                         shredded cheese
 
 1. Mix avocado and salsa in a small bowl; set aside at room temperature.
 
 2. Heat oven to 350 degrees. Line 2 cookie sheets with foil.
 
 3. Lightly coat both sides of tortillas with nn-stick spray.
 
 4. Bake on prepared sheets 8-10 minutes or until crisp. Remove to dinner plates
 .
 
 5. Meanwhile heat a large non-stick skillet over medium heat; add frozen pepper
  mixture and cook, stirring occasionally, 2 minutes or until thawed and soft. D
 rain.
 
 6. Wipe skillet with paper towel. Lightly coat with nonstick cooking spray and 
 place over medium heat. Add beaten eggs and scramble until cooked through but n
 ot dry.
 
 7. Spoon eggs on tortillas; top with salsa, peppers and the toppings.
 
 Per Serving without toppings: 419 calories, 20g protein, 31g carbohydrates, 3g
