         Taquitos w/ Tomatillo Sauce & Crumbled Queso Fresco Cheese

                         ***Tomatillo Sauce***
    1 1/2  pounds        tomatillos
    2      large         yellow onions -- finely chopped
    2      tablespoons   garlic -- minced
      1/4  cup           lime juice
    4      teaspoons     dried oregano
    4                    serrano peppers -- chopped
    1      cup           cilantro -- chopped
                         salt and pepper -- to taste
                         ***Taquitos***
   12      ounces        Cacique Brand Queso Fresco -- crumbled
    3      pounds        cooked chicken -- shredded
   12                    corn tortillas
    2      cups          canola oil -- for frying
 
 To make the Tomatillo salsa:
 Peel the outer thin skins of the tomatillos and dice. Mix with onions,
 garlic, lime juice, oregano, chilies, cilantro, and salt and pepper to
 taste. The Serranos vary in heat, so add accordingly.
 
 Heat the oil. Fill and roll the tortillas with the shredded chicken,
 hold closed with toothpicks. Deep fry until crisp and drain. Serve
 topped with the tomatillo sauce and crumbled Queso Fresco.
