            Carne Asada w/ Cilantro Sauce & Warm Manchego Cheese

   15      ounces        Cacique brand Crema Mexicana
   12      ounces        Cacique brand Manchego -- cut in 1/4 slices
    4      pounds        skirt steaks
    5      cups          cilantro -- chopped
    1                    onion -- chopped
    3      tablespoons   garlic -- minced
    4      tablespoons   lime juice
    1      tablespoon    oil
                         salt and pepper -- to taste
 
 Grill the steaks to desired doneness. To make the sauce, cook the onion, garlic
 , and cilantroin the oil. Add the lime juice and the Crema Mexicana. Simmer for
   10 minutes and purée in the blender, adding salt and pepper to taste. Top steak
  with a slice of Manchego to melt, and top with sauce.
