                Rustic Well-Fried Beans (Frijoles Refritos)

    1      cup           dried pinto, black or red kidney beans -- soaked
 and drained
    1      tablespoon    vegetable oil
    1      medium        onion -- minced
      1/2                jalapeno chile pepper -- seeded and minced
    1      teaspoon      ground cumin
      1/2  teaspoon      salt
    2      tablespoons   minced fresh cilantro
    2      teaspoons     Tabasco sauce
 
 Place the beans in a saucepan, add plenty of water to cover and cook for
 about 1 hour, until tender.  Drain, reserving about 1/2 cup of the liquid,
 and set aside.
 
 Heat the oil in a saucepan and add the onion.  Saute for about 5 to 7
 minutes, until tender.  Add the jalapeno, cumin, and salt and cook for 1
 minute more.
 
 Add half of the beans and a little of the reserved cooking liquid to the
 onion mixture and cook over medium heat.  Mash the beans with a spoon,
 forming a course puree.   Add more liquid as you mash the beans.  Add the
 remaining beans and continue to mash the mixture.  Cook for 15 to 20
 minutes, and then stir in the cilantro and hot sauce.
