                               Taco Casserole

    1      lb            ground turkey breast -- cooked
      1/2  c             onions -- chopped
      1/2  c             bell peppers -- chopped
    1      pkg           taco seasoning mix
    8      ozs           taco sauce
    1      c             fat-free sour cream
    1      c             low-fat cottage cheese
    1      c             tortilla chips -- crushed
    1      c             fat-free cheddar cheese -- grated
 
 Preheat oven to 350.  Prepare the bottom of a 2 1/2-quart casserole dish
 with cooking spray; set aside.  In a skillet, cook turkey, onions and
 peppers until turkey is no longer pink and vegetables are tender.  Add taco
 seasoning mix and taco sauce; mix and set aside.  In a medium sized bowl,
 combine sour cream and cottage cheese; set aside.  Place the crushed chips
 in the bottom of dish.  Add meat mixture to cover the chips, then cover the
 meat with the sour cream mixture.  Sprinkle with the grated cheese.  Bake,
 uncovered, for 30 to 35 minutes or until cheese melts and casserole is
 heated through.
