                   Lauralee Bell’s Mexican Shrimp Scampi

   Amount  Measure       Ingredient -- Preparation Method

    2      tablespoons   oil
    2      cloves        garlic -- minced
    1 1/2  lbs. large    shrimp -- peeled & deveined
      1/4  teaspoon      salt
      1/2  cup           dry white wine
      1/4  cup           fresh lime juice
    2      medium        tomatoes -- seeded and diced
      1/4  cup           cilantro leaves -- finely chopd
 
 In a large cast-iron skillet or aluminum pan, heat oil and garlic over
 Medium-High heat. After several minutes when garlic begins to brown, add
 shirmp and salt. Cook for 4-5 minutes, turning often. When shrimp turn pink
 and firm on the outside, add white wine, scraping and deglazing pan. Cook
 for 2 minutes, then add lime juice and tomatoes. Continue to heat for 2
 minutes more or unitl bubbling. Remove from heat. Sprinle with cilantro
 leaves and serve.
