    2      cups          red lentils
    1      teaspoon      salt
    5      cups          water
    1      tablespoon    olive oil
      3/4  teaspoon      turmeric
      3/4  teaspoon      ground cumin
      3/4  teaspoon      coriander
      3/4  teaspoon      ground ginger
      3/8  teaspoon      cayenne
    1      teaspoon      mustard seed
 
 Rinse red lentils and place in pot along with salt and water. Bring to a boil, 
 then reduce heat and simmer until completely tender, about 30 minutes. Heat a s
 killet over medium heat and add oil, then add all of the spices and cook over m
 edium heat until the mustard seeds begin to pop. Slowly spoon the cooked lentil
 s (water and all) into the skillet with the spices (be careful, it will spatter
 ), and stir to mix. Simmer gently, stirring often, until dal is thickened to th
 e consistency of refried beans. Serve hot. About 6 servings.
