Irmgard’s German Potato Salad
 
 5 lbs Small Potatoes*
 3/4 cup chopped onions
 3/4 cup apple cider vinegar
 3/4 to 1 cup of oil ( canola)
 1 table spoon salt
 2 table spoons sugar
 1 tea spoon pepper
 
 *Boil potatoes in the skin for 30 Minutes, or until done all the way through.
 Peel, when still hot, cut into 1/4 inch slices,
 Do not dice, if you use red potatoes, don't peel.
 
 Heat Oil, Vinegar, sugar, salt, and pepper (to almost a boil),
 Pour hot oil mix over sliced hot (warm) potatoes
 Mix in chopped onions, and add ½ cup of parsley for color
 Mix and let stand.
 Will keep for a week in the fridge
