                     Salat Gezer (Kibbutz Carrot Salad)

    2      cups          grated carrot
                         Juice of 3 large oranges -- (1/2 to 2/3 cup)
                         Juice of 2 lemons -- (about 6 tbsp)
      1/2  cup           water
    4      tablespoons   honey
    2      sprigs        fresh mint -- for garnish
 
 Place grated carrots in a large bowl. Strain orange and lemon juice with a siev
 e to remove seeds and pour over carrots. Add water and stir in honey.  Cover bo
 wl with palstic wrap and refrigerate for at least 2 hours to let flavors blend.
  Garnish with mint sprigs before serving.
