    2      cups          cooked rice, cooled -- * see note
   15      ounces        canned black beans -- rinsed and drained
    1      large         tomato -- chopped
      3/4  cup           Cheddar cheese -- cubed
      1/4  cup           green onions -- sliced
    2      tablespoons   cilantro -- chopped
    2      tablespoons   lime juice
    1      tablespoon    oil
    2      teaspoons     ground cumin
      1/8  teaspoon      ground red pepper
 
 * 2/3 cup uncooked rice = 2 cups cooked rice
 Combine all ingredients and refrigerate.
