                         **** SALAD ****
    3      cups          rice -- cooked, cold
    1      15 oz can     pinto beans -- rinsed, drained
    1      15 oz can     black beans -- canned, rinse, drain
    1      10 oz packag  green peas -- frozen, thawed
    1                    red onion -- chopped
    2      4 oz cans     green chiles -- chopped
      1/4  cup           cilantro
    1      cup           celery -- thinly sliced
                         **** DRESSING ****
      1/3  cup           white wine vinegar
      1/4  cup           olive oil
    2      tbl           water
                         salt and pepper
 
 Do use this ratio for the dressing.  Try seasoned vinegar too.
