                               orange sorbet

   Amount  Measure       Ingredient -- Preparation Method

                         grated rind of 1 orange
    1 1/2  cups          water
    1      cup           sugar
    2      cups          orange juice
    1      cup           uncarbonated mineral water
 
 In a medium saucepan, simmer rind with water and sugar 20 minutes.
 cool. strain. set aside rind.
 Combine sugar syrup, orange juice and  mineral water.
 freeze in ice cream maker according to manufacturer’s directions.
 Fold in orange rind just before sorbet firmly freezes.

 NOTES : This will take the juice from about 4 large oranges
