                                Potato Salad

    2 1/2  kilograms     potatoes, cooked, peeled, cut in 1/2 cube
      1/2  cup           chopped green onions
      1/2  cup           chopped fresh parsley

    1      cup           olive oil
      1/4  cup           tarragon vinegar
    1      tablespoon    worcestershire sauce
    1      teaspoon      salt
      1/2  teaspoon      dry mustard
    2      cloves        garlic -- minced
 
 Combine pots, green onion, and parsley in a bowl.
 Mix dressing ingredients and pour over salad while pots are still warm.
 Toss gently.
 Let stand at least 4 hours at room temp, stirring occasionally.
