                            CLASSIC POTATO SALAD

   Amount  Measure       Ingredient -- Preparation Method

    1      cup           mayonnaise
    2      tablespoons   vinegar
    1 1/2  teaspoons     salt
    1      teaspoon      pepper
    4      cups          cubed cooked potatoes (5-6 medium)
    1      cup           celery, sliced
      1/2  cup           chopped onion
    2                    hard cooked eggs, -- chopped
 
 Combine the first 5 ingredients.  Stir in remaining ingredients.  Cover,
 chill.
 Makes 5 cups.    
 I don't have any hints for cooking the potatoes, except don't let them
 get
 mushy.  Years ago a friend told me to put the potatoes in the
 refrigerator
 after cooking and let them cool before making the salad.
