       Title: Minted Potato Salad

       Yield: 6 servings
  
       4 md Potatoes
     1/2 c  Fresh parsley,chopped
       3 T  Olive or vegetable oil
       2 T  Lemon juice
       1 T  Chopped fresh mint
       1    Garlic clove, minced
     1/2 t  Salt, optional
         pn Ground pepper

   In a saucepan, cook potatoes in boiling water until tender. Peel and
   cube; place in a medium bowl. Combine remaining ingredients in a small
   bowl. Add to potatoes and mix well. Chill for at least 1 hour prior to
   serving.
