                              Arroz con Queso

   Amount  Measure       Ingredient -- Preparation Method

    1 1/2  cups          raw long-grain converted rice
    1      16 oz can     whole tomatoes -- mashed
    1      16 oz can     Mexican-style beans
    3      cloves        garlic -- minced
    1      large         onion -- finely chopped
    2      tablespoons   vegetable oil
    1      cup           cottage cheese
    1      4 oz can      green chili peppers -- drain, seed, chop
    2      cups          grated Monterey Jack cheese
 
 Mix thoroughly all ingredients except 1 cup of the grated cheese.  Pour mixture
  into well-greased Crock-Pot.  Cover and cook on Low for 6 to 9 hours.
 
 Just before serving, sprinkle with reserved grated cheese.
 
 Serves 6 to 8
