                                  Red Rice

    5      slices        bacon -- fried & crumbled
    1      large         onion -- chopped
    2      16 oz cans    diced tomatoes -- undrained
    1      cup           converted long-grain rice -- uncooked
    1      cup           finely chopped cooked ham
      1/2  teaspoon      salt
      1/4  teaspoon      black pepper
      1/8  teaspoon      hot sauce
 
 Fry bacon in skillet and set aside.  cook onion in drippings over medium-high h
 eat until tender.  Combine bacon, onion, tomatoes, rice, ham, and seasonings in
  Crock-Pot.  Cover and cook on Low 6 to 8 hours or on High 3 to 4 hours.  Serve
 .
 
 Serves 6 to 8
 
 Note:  If hotter rice is desired, add more hot sauce to taste.
