       1 c  olive oil
     1/2 c  cider vinegar
     1/4 c  fresh lemon juice
     1/4 c  sweet red onion
     1/4 t  salt
     1/4 t  white pepper
     1/4 t  black pepper
       1 t  flat-leaf parsley
     1/2 t  sugar
      12 oz light tuna in water
       1 c  fresh green beans
       4 ea red potato
      16    green olive
       8 ea plum tomato
       1 lb mixed greens
 
 combine olive oil, vinegar, lemon juice, onions, salt, white pepper,
 black pepper, parsley, and
 sugar in a blender or food processor
 process until well blended, set aside
 arrange tuna, green beans, potatoes, olives, tomatoes, and mixed greens
 onto a lettuce-lined
 platter
 lightly moisten with the dressing mixture
 garnish with quartered hard-boiled eggs, capers, and parsley
 serve chilled
