                  Queso Blanco Fresco and Vegetable Salad

                         ***Salad***
   12      ounces        Cacique Brand Queso Blanco Fresco
    3                    cucumbers -- peeled and sliced
    1                    red onion -- thinly sliced
    6                    Roma tomatoes -- sliced
                         ***Cilantro Vinaigrette***
    1      cup           lime juice
    3      tablespoons   lime zest
    1      bunch         cilantro leaves
    1      clove         garlic
    1      tablespoon    white wine vinegar
    1 1/2  cups          canola oil
                         salt and pepper -- to taste
 
 Slice the cheese in 1/4 slices. In a serving platter, alternate layers of slic
 ed tomatoes, onions, and cucumber. Drizzle with the Cilantro vinaigrette.
 
 Cilantro Vinaigrette:
 Put the lime juice, lime zest, cilantro, garlic and white wine vinegar in a ble
 nder . When the cilantro has broken down into a fine purée, start adding the oil
 . Test for tartness. Add salt and pepper to taste.
