                        SPICY UDON SALAD WITH ARAME

    1       c            EDEN Arame or Hijiki
    1       c            Water
    2       md           Carrots
                         -- cut into matchsticks
    1       pk           EDEN Soba or Udon
    4                    Green onions
                         - sliced into thin diagonals
                         -----DRESSING-----
    1       tb           EDEN Hot Pepper Sesame Oil
    1       tb           EDEN Toasted Sesame Oil
      1/8   c            Water or stock
      1/4   c            EDEN Ume Plum Vinegar
      1/4   c            Sesame tahini
    3                    Garlic cloves
                         -- peele and pressed
 
   Soak arame or hijiki in water for 10 minutes.  Simmer
   for 10-15 minutes. Drain.  Lightly steam carrots.
   Rinse with cold water to set color.  Cook pasta as
   package directs.  Rinse and drain.  Mix pasta, arame,
   carrots, and green onions.  Prepare dressing.  Add to
   salad.  Mix well.  Chill.
   
   Prep Time: 10 minutes
   Cooking Time: 15 minutes
   Yield: 5-6 servings
