                        Spicy Cucumber Chicken Salad

    3      whole         skinless boneless chicken breast
    4      whole         cucumber -- julienned
                         Dressing
    2      tablespoons   Szechuan peppercorns
    2      tablespoons   sesame paste or peanut butter
    1      tablespoon    sugar
    2      tablespoons   white wine vinegar
    4      tablespoons   soy sauce
    3      tablespoons   scallion -- minced
    3      tablespoons   ginger -- minced
    2      tablespoons   garlic -- chopped
    2      tablespoons   hot pepper oil
 
 Broil chicken, turning once until completely cooked but still tender. Remove sk
 in and chop into bitesize pieces.
 Place cucumbers on serving plates and top with chicken.
 
 Soften peppercorns in hot water. Drain and combine with remaining dressing ingr
 edients until well blended. Pour dressing over chicken and serve.
 
 Cucumber and chicken can be chilled in advance or served at room temperature.
