                        Caribbean Turkey  Rice Salad

    1      package       oven roasted or hickory smoked turkey -- about 1
 1/2 pound
                         breast
    3      cups          cooked rice -- chilled
    1      large         tomato -- chopped
      3/4  cup           celery -- diag. cut
      3/4  cup           golden raisins
      1/3  cup           salted peanuts -- chopped
                         DRESSING:
      1/2  cup           oil
    3      tablespoons   curry powder
    4      teaspoons     curry powder
      3/4  teaspoon      dry mustard
      3/4  teaspoon      onion salt or garlic salt
      1/4  to 1/2 tsp.   Tabasco sauce
 
 Cut turkey into 1/2 cubes. Place in a large bowl with all other salad
 ingredients, except peanuts. Stir together dressing ingredients and pour
 over turkey mixture. Mix well. Cover and refrigerate for 1-24 hours. Stir
 peanuts into salad just before serving.

 NOTES : Can easily be cut in half. Excellent recipe. Would make good
 pot-luck recipe.
