       Title: Chicken Salad with Strawberry Vinaigrette

       Yield: 4 servings
 
       1 c  sliced strawberries
       2 tb vegetable oil
       2 tb red wine vinegar
     1/4 ts salt
     1/4 ts pepper
       8 c  torn lettuce
   2-1/2 c  slivered, cooked chicken
       2 c  strawberries; halved
       1 c  sliced cucumber
 
   1.  For vinaigrette.  In food processor, mix strawberry slices, oil,       
   vinegar, salt and pepper until smooth.  If not using immediately, cover and
    refrigerate.                                                              
                                                                              
   2.  Arrange lettuce on 4 dinner plates.  Top each with chicken, berry      
   halves and cucumber.  Drizzle with dressing and serve immediately.
