       Title: Zucchini Mint Salad

       Yield: 6 Servings
 
       4 c  To 6 fresh spinach, torn
       1    To 2 zucchini, cut into bite
            -sized pieces
     1/2    Red onion, sliced
     3/4 c  Crumbled feta cheese
            Dressing:
     2/3 c  Olive oil
       3 tb Bottled mint sauce
       2 tb Fresh lime juice
       1 ts Dijon mustard
       1 cl Garlic, minced
     1/4 c  Chopped fresh mint
            Pepper to taste
 
   In a large salad bowl, combine spinach, zucchini,
   onion and feta cheese. Combine dressing ingredients in
   a jar; shake well.  Toss with salad just before
   serving.  Serves 6-8  Typed in MMFormat by
