                        Roast Beef and Tomato Salad

   Amount  Measure       Ingredient -- Preparation Method

    1      head          Boston lettuce leaves
    1      bunch         arugula -- torn
      1/2  pound         thinly sliced cooked roast beef
    1      small         red onion thinly sliced -- seperated into rings
    1      medium        tomato -- thinly sliced
    4      ounces        crumbled blue cheese
                         Sherry Vinaigrette :
      1/4  cup           olive oil
    4      teaspoons     dry sherry or red wine vinegar
    1      teaspoon      Dijon mustard
      1/8  teaspoon      salt
           dash          pepper
    1      small         shallot -- finely chopped
 
 1. Shake oil, sherry, mustard, salt, pepper, and shallot in a tightly covered
 container.
 2. Place Boston lettuce on serving platter.   Sprinkle arugula over lettuce.
 Fold roast beef slices.   Place roast beef, onion and tomato on greens.
 Sprinkle with cheese.   Serve with vinaigrette. 
 Yield: 4 servings.
