    2      cups          tomatoes -- chopped
      1/2  cup           chopped scallions
      1/2  cup           chopped celery
    2      tablespoons   chopped fresh mint
    2      cups          bulgur -- prepared
    1      tablespoon    extra virgin olive oil
      1/4  cup           fresh lemon juice
      1/4  teaspoon      allspice
      1/4  teaspoon      black pepper

 NOTES : Tabbouleh’s basic ingredients are bulgur and seasonal reds and greens. 
  Add a lemon-olive oil vinaigrette. Variations tend to emphasize color. Toasted
  nuts and seeds are also popular additions. Olives, in season.
