                             Salmon Rice Salad

   Amount  Measure       Ingredient -- Preparation Method

    2      cups          rice -- dry measure/cooked
    1      7 1/2 ounce   red salmon -- drained & flaked
      1/2  cup           chopped celery
      1/2  cup           chopped cucumber -- seeded, unpeeled
    2      tablespoons   onion -- finely chopd
      1/2  cup           Ranch salad dressing -- prepared
                         cucumber slices -- if desired
 
 Lightly oil a 4 cup milk or bowl. Combine all ingredients except cucumber
 slices. Mix lightly. Lightly press rice mixture into oiled mold. Cover and
 refrigerate several hours or overnight. place serving palte over mold.
 Invert to unmold salad. Garnish with cucumber slices.
