                          Sausage-Stuffed Tomatoes

   12      Large         firm tomatoes
    1 1/2  C.            soft bread crumbs
    9      Tbsp.         finely chopped celery
    9      Tbsp.         finely chopped green pepper
      1/2  Tsp.          McCormick-Schilling sweet basil
    1 1/2  Lb.           mild bulk pork sausage -- cooked, crumbled
                         and drained
                         salt and McCormick-Schilling
                         black pepper to taste
      1/2  C.            shredded -- (2 oz.)
                         Cheddar cheese
 
 Cut tops from tomatoes; scoop out pulp, leaving shells
 intact. Chop pulp; combine tomato pulp, bread crumbs, celery,
 green pepper, basil and cooked sausage; mix well. Sprinkle
 inside of tomato shells with salt and pepper. Arrange tomatoes
 in an 8-inch square baking pan. Bake at 350 degrees for 15 minutes or
 until tomatoes are thoroughly heated. Sprinkle tomatoes with
 cheese. Bake 1 additional minute or until cheese melts.
 Yields 12 servings.
