1 1/2 cups plain fat free yogurt
 8 scallions, finely chopped
 1 teaspoon kosher salt
 Freshly ground pepper to taste
 
 Place the yogurt in a paper-towel lined sieve
 and let stand until the liquid drips out, several
 hours or overnight.  Transfer to a bowl and stir in
 the scallions, salt and pepper.
 
 Makes: 4 servings.
