       Title: Yucca Fritters - 2c
  Categories: 2c, latin, vegetable
       Yield: 8 servings
 
   1 1/2 lb Yuca; cassava or tapioca
     1/2 ts baking soda
       2 md eggs
       1 tb flour
       1 ds Oil
       1 pn salt
            clear honey
 
 Cook the peeled yucca with a pinch of salt and 1/2 teaspoon of baking soda.
 Remove when it is cooked to the center. Mash and mix with the eggs and
 flour.
 
 Make into patties and fry in hot oil. Brown on both sides.
 
 Eat with honey. It is very delicious.
