   Amount  Measure       Ingredient -- Preparation Method

                         Ingredients:
    1      small         onion -- thinly sliced
      1/4  cup           olive oil
    3      small         zucchini -- cut into 1/8 slices
    4      medium        tomatoes -- peeled and chopped
    2      medium        red peppers -- chopped
    1      clove         garlic -- finely chopped
      1/2  teaspoon      sugar  *1
      1/4  teaspoon      white pepper
      1/8  teaspoon      dry mustard
    1      teaspoon      lemon juice
      1/4  cup           parsley -- snipped
 
 *1 use artificial sugar if you are a diabetic
 
 Direction:
 Cook and stir onion sliced in oil until tender.  Stir in remaining 
 ingredients except parsley.  Reduce heat; cover and simmer 3 minutes. 
 Uncover and cook over medium heat, stirring constantly, until liquid is 
 evaporated.  (Watch carefully.)  Turn into serving dish and sprinkle
 with 
 parsley
 
 1 Serving = 1 Vegetable Choice 2 Fats
 
 (When I make I use only 1/4 cup of olive oil, so it will only be 1 fat.
