      title: mini artichoke souffles

   servings: 6
 
       6 ea artichoke
       2 t  unsalted butter
       2 t  flour
       1 c  milk
       1 c  gruyere cheese
     1/4 t  salt
     1/4 t  black pepper
       3 ea egg yolk
       4 ea egg white
 
 simmer artichokes in boiling salted water for 20-35 minutes, until tender
 drain well and cool
 pull out center and scrape out choke with a spoon
 trim butt to set upright, set aside
 heat butter in a saucepan, over a medium flame
 whisk in flour and cook for 3 minutes
 gradually whisk in heated milk
 heat and stir, until thickened
 stir in cheese
 season to taste with salt and pepper
 remove from heat and cool for 2-3 minutes
 beat in egg yolks
 fold in egg whites
 spoon into artichokes
 stand upright in a greased casserole
 bake @ 400 degrees for 15 minutes, until fully risen and lightly browned
 on top
 serve hot, in a bowl
