                 Cauliflower with Fresh Tomatoes and Basil

    1      tbsp          olive oil
    4                    spring onions
  675      g             ripe tomatoes -- skinned
                         , deseeded and quartered
                         salt and freshly ground black pepper
    2      tbsp          fresh basil leaves -- torn
    1      large         cauliflower -- cut into florets
                         fresh basil -- to garnish
 
 1. Heat the oil in a pan and add the onions and tomatoes. Cook for 1-2
 minutes. 
 
 2. Stir in the seasoning and basil and cook for 1-2 minutes. Meanwhile,
 cook the cauliflower in boiling, salted water for 4-5 minutes until almost
 tender. Drain well.
 
 3. Arrange the vegetables on a serving plate and garnish with fresh basil.
